Spinach Pasta

10 ounces fresh spinach -- stemmed, washed, and dried
1 1/2 cups all-purpose flour
4 tablespoons nonfat liquid egg substitute -- (4 to 5)

Put the spinach into the bowl of a food processor and process to a coarse chop. Add the flour and process until well mixed. While pulsing, add the liquid egg substitute 1 tablespoon at a time, just until bits of dough the size of large peas form.

Turn the dough out onto a floured work surface and knead for about a minute until glossy and elastic. Form it into a ball, cover with plastic wrap, and set aside for 30 minutes.

Roll out and cut the dough into fettuccine noodles.
