    Penne alla Vodka--5 points

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 teaspoons olive oil
    1 onion -- chopped
    2 cloves garlic -- minced
    28 ounce can chopped whole tomatoes in puree
    1/4 teaspoon crushed red pepper flakes
    1/2 cup minced fresh parsley
    1/2 cup evaporated skim milk
    2 tablespoons vodka
    8 cups penne pasta -- hot and cooked

    1. In a large nonstick saucepan, heat the oil. Add the onion and garlic; cook, stirring as needed, until softened, about 5 minutes.

    2. Stir in the tomatoes and pepper flakes; bring to a boil. Reduce the heat and simmer, uncovered, until the sauce is slightly thickened, about 10 minutes.

    3. Stir in the parsley, milk and vodka; cook until heated through, about 1 minute. Place the penne in a large serving bowl; add the tomato mixture and toss to coat.

    You said this was a favorite? I think I made it wrong... mine didn't taste too good. Husband didn't like it too much either. Any recommendations?

    I used crushed tomatoes b/c it was all I had. Maybe that had something to do with it? Also, don't think I cooked the onions/garlic enough... and, I used that frozen parsley stuff. Parsley ended up being the major taste in the sauce.

    What do you think? Did I do something wrong? Any recommendations...

    Well this was a big hit tonight with my family
    with a few qualifications.

    It is a very strong recipe though and I think I might cut back a bit on the vodka/fresh parsley especially/onions/garlic and red pepper... though everyone loved it.

    I think the lack of cream/fat makes it not be able to carry the intensity maybe...but that is just my instinct. I'll have to look up some traditional Penne Alla Vodka recipes to compare
    ingedients. I also used crushed tomatoes with puree.

    Husband ironically found it the strongest.He felt it was the parsely and pepper flakes. I thought my kids 14 and 10 would go ew.... They did not blink and asked for 2nds.

    He ate last after working out so maybe it had lost some liquid and concentrated a bit.
    I think you cannot let it sit too long and maybe evaporate where it gets stronger?

    Anyway it was a nice treat and a change of pace from the usual fare. I will revise it to taste which is what we all must do with recipes.

    I smell like I dunno what but I am well satisfied
    and plan to try a few more posted here!
