VICKILYNN'S TRIED AND TRUE MINI WW PIZZA CRUSTS

Amount Measure Ingredient -- Preparation Method

1 1/2 cups water -- 110 - 120 degrees
2 teaspoons yeast -- SAF
2 cloves garlic -- minced
2 tablespoons flour, wheat gluten
1/4 teaspoon salt -- optional, see note
3 cups whole wheat flour -- or more if needed

Mix warm water, 1 cup flour and yeast in a large bowl and mix well.
Let sit for about 5 minutes. Add remaining ingredients. Add enough flour to make a stiff dough.

Knead for 5-7 minutes and let rest about 15 minutes. Divide into 8 portions and roll each portion to an 8 inch circle. Place on baking sheet or pizza stone sprayed lightly with olive oil, or dusted lightly with flour.

Pierce all over crust with a fork to prevent bubbling.
Bake in a preheated 475 oven for 6 minutes or until golden but not browned.
Remove crusts from oven and top with favorite toppings.

Bake topped pizzas at 450 for 7-10 minutes or until cheese is melted.
