1 10 oz package frozen chopped spinach, thawed
2 tsp vegetable oil
2 c chopped broccoli
1 1/2 c sliced carrot
1 c onions
1/2 c red pepper
3 cloves garlic, crushed
1/2 c flour
3 c 1% milk
1/2 c parmesan cheese, divided
1/4 tsp salt
1/4 tsp pepper
1 1/2 c low fat cottage cheese
1 c shredded mozzarella cheese...part skim
1/2 c shredded swiss cheese
12 cooked lasagna noodles

Press spinach between paper towels unitl barely moist, and set aside. In a pan add oil and broccoli and next 4 ingredients; saute 7 min. Set aside.

Place flour in a saucepan, Gradually add milk, stirring with a whisk until blended. Bring to a boil and cook 5 min. or until thickened, stirring constantly. Add 1/4 c parmesan cheese, salt and pepper; cook another minute. Remove from heat and stir in spinach. Reserve 1/2 c of mixture to spread over top layer of noodles. Set aside.

Combine cottage cheese, mozzarella, and swiss cheese. Spread 1/2 c remaining spinach mixture in bottom of a 13x9x2 baking dish, coated with cooking spray. Arrange 4 noodles over pinach mixture;top with half of cottage cheese mixture,half of the veggie mixture, and 1/2 spinach mixture. Repeat layers, ending with noodles. Spread reserved 1/2 cup spinach mixture over noodles and sprinkly remaining 1/4 c parmesan cheese. Cover and bake at 375 degrees for 35 min. Let stand 5 min.
