Thread: Roasted Red Pepper Pizza ~ 9 Points

    I made this recipe last night from a new cookbook - VERY YUMMY!

    Roasted Red Pepper and Chevre Pizza
    Courtesy of: Betty Crocker Healthy Choices Cookbook
    Servings: 5
    Points per Serving: 9

    3 oz. of neufatchel cheese (or light cream cheese)
    4 oz. of softened chevre (goat) cheese
    1 7 oz. jar of roasted red peppers, drained and coarsely chopped
    1 large thin boboli pizza crust
    1 cup light mozzarella cheese

    Mix together the neufatchel and chevre cheese until softened. Spread over the boboli pizza crust within 1/2" of the edge. Sprinkle roasted red peppers over the cheese mixture and top with 1 cup mozzarella cheese.

    Bake at 425 for 12 minutes or until cheese is melted and bubbly.

    This looks good but can you use other cheeses for this? Like mozzarella? I am just curious.... [img]graemlins/help.gif[/img]
