I got creative again in the kitchen tonight while I was handing out the candy to the tricksters. I HAD to keep busy to keep my face out of the goodies. Here's my lunch for tomorrow.

Pasta Salad

6 oz. dry whole wheat pasta (if you use regular pasta then use 4.5 oz dry pasta)
1 (19oz.) can of stewed tomatoes (I used a can of "recipe starter")
Any variety of veggies cut up small (if you use carrots you can throw them in with the pasta to cook, as they take longer)
Garlic (to taste)
1/2 minced onion
1 tsp. chili powder
1 tsp. italian seasoning

Cook the pasta (and carrots if you are using them). Drain and set aside.

Put can of tomatoes, onion and garlic in a pot. Cook over medium heat until onion is soft. Add chopped veggies (I used a stalk of celery, one small zucchini, handful of carrots, 1/2 orange pepper and some mushrooms). Add spices. Simmer for 10-15 minutes covered. Pour sauce over pasta and stir to combine.

Makes 3 servings - 3.5 points

If you want, you can also sprinkle some shredded low fat or fat free cheese over top and let it melt into the salad.

It looks and smells delicious. Hope it tastes the same way tomorrow!
