Thread: 20 Minute Vegetable Pasta Marinara

    In a microwave 1 qt. Bowl (with lid), combine:
    1/4 cup each chopped red and green pepper
    1/4 cup chopped onion
    1/4 cup sliced mushrooms
    2 cloves of minced garlic
    Microwave high 3 minutes
    In a saucepan, combine and heat:
    Large (16 oz jar at least) of fat free Marinara sauce
    vegetables
    1/4 cup red or white wine
    Serves 4; 0 points per serving

    with 1 cup pasta - 3 points

    add to sauce and pasta choices of the following:
    1 cup shrimp add 2 points (5 points total)
    1 chicken breast, sliced add 3 points (6 points total)
    1 tbls. Parmesan cheese add 1 point (4 points total)

    I got that Meals for Two cookbook a couple of weeks ago, and really like it too. I saw it referred to in another post, and can't find it now.

    It is such a bear to find their cookbooks now. I want to pick-up Make It Snappy, which a friend has, and it is pretty good too.

    Dawna, what makes this so appealing is all the busy people that can make a good meal really quickly cause it is 'nuked.'

    I found it at one of those not-to-be-named other 'support' websites. Sometimes they have decent recipes.

    This is really a good pasta base. I add whatever fresh veggies I have in the fridge and it only makes it better!
