I found this recipe when I was doing the Atkins diet and it is great!!!

1 boneless skinless chicken thigh 4oz (4pts)
1/4 cup of lf shredded mozzerella cheese(1pt)
1/2 cup ragu pizza sauce (1pt)

Flatten chicken thigh with rolling pin place half of the cheese and sauce on the flattened thigh and roll. Use toothpicks to keep rolled while cooking. Put in the oven for 35-40 min on 350. About 10 min before the chicken is finished add the remaining sauce and cheese to the top of chicken.

You can add a variety of toppings I have found that if you put the topping in the roll it makes the chicken taste like the topping added. Also I add garlic powder to add a little extra zing
