I adapted this recipe from the one Kraft provides for Velveeta, using a bit less cheese (although still plenty) and Velveeta Lite vs full-fat Velveeta.

Note to all you "non-milk drinkers" -- the amount of cheese per serving provides 60% of your daily calcium requirement!!

Easy Macaroni and Cheese -- 4 servings, 5 pts per serving

6 oz macaroni (or use something "fancier" if you want)
8 oz Velveeta Lite, cubed
1/3 cup skim or 1% milk
pepper to taste
2 cups chopped broccoli, cooked (optional)

Boil macaroni according to package directions and drain. Return to cooking pot.

Add Velveeta and milk, stir over low heat to mix in cheese as it melts. Add broccoli if desired, and season with pepper.

Other addin ideas: chicken, tuna, etc.

Smaller servings can be used as a side dish. I divided into single-serving freezer containers and froze -- cheaper and lower in points than Lean Cuisine Mac and Cheese!
