1 teaspoon Butter
1 teaspoon Olive oil
1 each Onions -- sliced thin
1/2 each Garlic cloves -- chopped fine
3/4 cup Ham, extra lean -- cut in 1/2" pieces
1/2 teaspoon Basil
1 tablespoon Parsley -- chopped fine
1/2 cup White wine
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/4 pound Rigatoni
1 each Potatoes -- cut in 1/2" pieces
1/2 each Cauliflower flowerets
2 Tablespoons Parmesan cheese -- grated

1. Bring four quarts of water to a boil.

2. Heat butter and oil and add onions. Cook until golden.

3. Add garlic, ham, basil, parsley, wine, salt and pepper and simmer a few minutes.

4. Add rigatoni and potatoes to water with salt and pepper and cook about four minutes.

5. Add cauliflower and cook four to five more minutes. Drain and add to ham mixture.

6. Toss with the grated cheese.

7. Serve with additional grated cheese.

Serving Ideas: Although unusual and delicious, most of the ingredients are white so this dish does not make an attractive presentation on its own. If you plan to serve this to company, put it in a colorful serving dish and/or add a colorful garnish.
