Thread: Easy Skillet Lasagna

    This recipe is very easy and tastes like you spent much more time making it than you actually did!

    Easy Skillet Lasagna
    Courtesy of:
    Servings: 4 (1 1/2 cups each)
    Points: 6 points each serving

    6 oz. uncooked dried mini lasagna noodles (mafalda)
    1 jar reduced fat chunky vegetable spaghetti sauce
    1 8 oz. package frozen sugar snap peas
    1 cup lowfat cottage cheese
    2 tbsp. grated parmesan cheese
    2 oz. mozzarella cheese, shredded

    Cook noodles according to package directions, drain.

    Meanwhile, combine spaghetti sauce and sugar snap peas in 10-inch skillet. Cool over medium-high heat, stirring occasionally, until peas are tender and mixture is heated through (4-5 minutes.)

    Stir in cooked noodles, cottage cheese and parmesan cheese; mix well. Sprinkle with mozzarella cheese. Cover, continue cooking until cheese is melted (1 minute.) Serve immediately.

    ChristineP: I could not find mini lasagna [mafalda] at my store. Do you think bow ties would work? Only thing that was flatish. Also how much spaghetti sauce? Mine comes in 28 oz jar and suspect that is toooooo much.

    For this recipe, I think that I actually did use bowtie pasta, because although I have seen mini-lasagna noodles in the grocery story, I couldn't find them at the time that I wanted to make this.........I also used your "standard" jar of sauce - I can't remember the ounces on it right now......

    I love it and so does my family.
    I make this once a week now.
    I even gave it to a co-worker who is also on WW.
    and she loved also.
