Here is a lunch I make for myself quiet often. It is quite satisfying and delicious.

Serves 1 for 6 points

2 ounces dry pasta (I like angel hair)
4 ounces water-packed tuna
1 fresh tomato, chopped
1/2 green pepper, chopped
1/2 cup mushrooms, sliced
1 small green onion, sliced
2 tablespoons parmesan cheese
1 teaspoon olive oil
1 tsp. garlic powder

Cook the pasta in boiling water according to package directions. While it's cooking, put all of your chopped vegetables in a colander in the sink. When the pasta in done, pour the water and pasta over the vegetables in the colander and let stand for 1 minute. (This lightly steams the vegetables). Put pasta in vegetables in a medium-sized bowl. Add the olive oil, garlic and parmesan. If you have a lid for the bowl, shake well..if not, toss until oil and parmesan coat everything. Serve on a pretty plate and enjoy yourself!
