    This recipe calls for a 12" pizza crust. I used Pillsbury..the one in the refridgerated section..in the "tube".
    It has some very strange ingredients for a "pizza". I wasn't sure if we'd even like it. WE LOVED IT!!!!!!
    From "The Complete Cooking Light Cookbook"

    1/4 cup packed brown sugar
    3/4 cup rice wine vinegar
    1/4 cup low-sodiium soy sauce
    3 tbsp water
    2 tbsp chunky peanut butter
    1 tbsp peeled minced fresh ginger
    1/2 to 3/4 tsp crushed red pepper
    4 garlic cloves, minced
    Cooking spray
    1/2 pound skinned, boned chicken breast, cut into bite-size pieces
    1/2 cup (2 oz) shredded reduced-fat Swiss cheese
    1/4 cup (1 oz) preshredded part-skim mozzarella cheese
    1 (12") pizza crust
    1/4 cup chopped green onions

    1. Preheat oven to 450 degres.
    2. Combine first 8 ingredients in a bowl; stir well with a whisk.
    3. Coat a large nonstick skillet with cooking spray; place over med heat until hot. Add chicken; saute 2 minutes Remove from pan.
    4. Pour vinegar mixture into pan; bring to a boil over med-high heat. Cook 5 minutes or until slightly thick. Return chicken to pan, and cook 1 minute or until chicken is done. (Mixture will be consistency of thick syrup)
    5. Sprinkle cheeses over prepared crust, leaving a 1/2" border, and top with chicken mixture. Bake at 450 for 12-15 minutes. Sprinkle with green onions. Remove pizza to a cutting board; let stand 5 minutes,.
    Yield: 6 servings (serving size: 1 wedge)

    pulling up, cause you've GOT to try this one! We had it again tonight, and I can't wait to eat a piece of leftover for lunch tomorrow! It's soooooooo good!!

    I made this for company last night. It was awesome! The only change I will make for next time is to lower the vinegar just a tad.
