This Pizza is unusual, but really filling and very popular with DH and my potluck friends

Black Bean Pizza

8 ounces black beans, cooked
1 pound eggplant
________thinly sliced,lengthwise
1/2 teaspoon garlic powder
1/4 teaspoon fresh ground black pepper
15 ounces pizza dough
3 ounces lowfat goat cheese
1 large tomato -- diced
1/2 cup scallions -- chopped
2 ounces mozzarella cheese, part skim milk -- shredded
2 tablespoons parmesan cheese
1 teaspoon olive oil

1. Rinse and drain the beans to reduce salt.
2. Preheat the broiler. Coat a large baking sheet with non-stick spray.
Place the eggplant slices in a single layer on the sheet. Sprinkle with
garlic powder and pepper. Broil for 3 minutes. Flip the pieces and broil
for 4 minutes, or until the eggplant is tender and the edges begin to
brown.
3. Preheat the oven to 475 degF. Shape the dough on a pizza pan or pizza
stone. Prebake the crust until it firms up, but isn't yet browning. Maybe
5 minutes.
4. Remove the crust and crumble the goat cheese evenly over it. Top with
eggplant, tomatoes, scallions and black beans. Sprinkle with the
mozzarella and Parmesan. Drizzle with the olive oil, or spray lightly
with olive oil spray.
5. Bake for 6-10 minutes, or until the cheese is golden and has lightly
melted. Let stand for 5 minutes before slicing.
