Thread: Stuffed Pasta Shells (6 points)

    12 ounces ground beef,extra
    1/4 cup green pepper
    1/2 cup mushrooms
    2 cloves garlic
    1 cup tomato sauce
    16 jumbo pasta shells
    3 ounces mozzarella cheese, non-fat
    1/2 cup onion, chopped

    Preheat oven to 350. Brown hamburger, onion, green pepper, mushrooms and garlic with pam or equivalent. Add 1/2 cup of the spaghetti sauce (enough to make meat moist, but not soupy. Cook pasta and Stuff shells with meat mixture and place in casserole dish sprayed with nonstick spray. Pour remaining sauce over shells and sprinkle with mozzarella cheese and bake for 1/2 hour or until cheese bubbles. Each serving provides: 3 1/4 proteins, 1 3/4 veggies, 1/4 fat, 2 breads. This comes out to 6 points for 4 shells (using non fat cheese) or 7 points if using part-skim. .

    This is one of my favorite recipes. I have to make it nearly every week, since my SO has indicated he will eat it any time I fix it.

    Once the shells are filled and baked, I divide the servings up into GladLock or ZipLock plastic containers and refrigerate. I eat mine as prepared or add a little pasta sauce and reduced fat cheese, he adds more meat (if any is left over after the shells are stuffed), more sauce and more regular cheese. He is happy, I am happy and we both have something we can take to work for lunch or reheat for dinner.

    If you have a beef eater in your household, you really should try these shells.
