My wife and I have developed a terrific low point grilled pizza.Take a no fat flour tortilla, spray both sides lightly with olive oil cooking spray,place it on grill(charcoal,gas or electric)Turn as soon as it starts to brown(30 sec. to 1 min. depending on heat)Have topping ingredients ready to top immediately. Cook until crust is crispy,(a little charring along the edges adds to the flavor.)You can top these pizzas with a variety of low fat toppings,tomato sauce,low fat cheese,turkey sausage,peppers,onions,olives,etc. Just remember,don't over do it on the toppings(the pizza doesn't stay on the grill long enough to melt a lot of cheese) For the best results saute' the vegetables beforehand.

Mushroom Pizzas:
2 nonfat flour tortillas
1 pkg crimini or baby portabello mushrooms - sliced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh thyme
2 large cloves garlic - finely chopped
juice of one lemon
2 Tbsp shredded parmesan
1/2 tsp salt, 1/4 tsp course black pepper
Mix parsley, thyme and garlic together, set aside. Saute mushrooms in lemon juice in a sprayed nonstick skillet with 1/2 of herb mixture until cooked - about 5 minutes. After flipping tortilla on grill, top with mushroom mixture, rest of herbs, cheese and salt/pepper. Remove from grill when bottom crust is browned - a minute or two. Makes 2 pizzas, 4 points per pizza!!

Another suggestion: Top crust with sliced tomatoes, fresh basil, capers, 1/4 cup low fat mozzarella cheese and salt/pepper for another delicious 4 point pizza.
