Penne alla Vodka

2 teaspoons olive oil
1 onion, chopped
2 garlic cloves, minced
one 28-ounce can whole tomatoes in puree, chopped coursely
1/4 teaspoon crushed red pepper flakes, or to taste
1/2 cup minced parsley
1/2 cup evaporated skim milk
2 tablespoons vodka
8 cups hot cooked penne

In a large nonstick saucepan, heat the oil. Add the onion and
garlic; cook, stirring as needed, until softened, about 5 minutes.

Stir in the tomatoes and pepper flakes; bring to a boil. Reduce
heat and simmer, uncovered, until the sauce is slightly thickened,
about 10 minutes.

Stir in the parsley, milk and vodka; cook until heated through,
about 1 minute. Place the penne ina large serving bowl; add the
tomato mixture and toss to coat.

Per serving: 261 calories, 2 g total fat, 0 g saturated fat, 1 mg
cholesterol, 179 mg sodium, 49 g total carbs, 3 g dietary fiber, 9 g
protein, 99 mg calcium.
