40 ounces potatoes -- (recipe says 4 large) Scrub well and grate
1 onion -- chopped
1/4 cup cornstarch
1/4 cup mustard
2 tablespoons parsley -- chopped

1. Preheat oven to 400 degrees.

2. Mix grated potato, chopped onion in a bowl. Combine remaining ingredients in another bowl and add to potato/onion mix.

3. Spoon onto nonstick cookie sheets and bake for 25 minutes or until golden brown.
