I confess – I lifted this one from 1001 Vegetarian Recipes & modified it a bit. I bought this cookbook when I was a vegetarian & I highly recommend it for veggie recipes (even my dad likes it, although he adds chicken to a lot of the recipes [img]smile.gif[/img] ). This recipe is a great way to get those greens!

3 T olive oil (2 is fine – 3 points less) (9 points)
6 cloves garlic, whole & unpeeled (0 points)
1 bundle red Swiss Chard, chopped (yes, green can be used, but red is much prettier!) (0 points)
3/4 lb Yukon gold potatoes (or similar), cubed (3 points)
2 portabella mushrooms, roughly chopped (0 points)
2 T fresh rosemary, chopped (0 points)
1/2 t salt (0 points)
1/4 t pepper (0 points)

Warm oil in skillet. Add potatoes & garlic, stirring frequently for 10 minutes. Add rosemary, stirring for 1 minute. Add chard, mushrooms, salt, and pepper, stirring until chard is wilted.

Serves 6 for 2 points or 4 for 3 points

The original recipe didn’t call for mushrooms, but I added them to make it a little heartier & served it with the WW Week 5 steak. DB loved both & didn’t know he was eating “WW food.” [img]smile.gif[/img]

Note: I wouldn’t recommend less than 2 T of the oil because it really helps bring out the flavors, but if you must, using only 1 T would reduce this recipe to 1 point per serving if you use it for 6 servings.
