Thread: CLASSIC POTATO SALAD

    1 1/2 pounds baking potatoes, halved
    1/2 cup finely chopped red onion
    1/4 cup finely chopped celery
    1/4 cup sweet pickle relish
    2 hard-cooked large eggs, coarsely chopped
    1/3 cup light mayonnaise
    2 tablespoons cider vinegar
    1 tablespoon Dijon mustard
    1/4 teaspoon salt
    1/4 teaspoon pepper

    1. Cook potato halves in boiling water 25 minutes or until potatoes are tender; drain and let cool completely.

    2. Cut potatoes into 1/2-inch cubes. Combine potatoes, onion, celery, relish, and eggs in a large bowl. Combine mayonnaise and next 4 ingredients in a small bow; stir with a whisk. Pour dressing over potato salad; toss gently to coat. Cover and chill at least 8 hours.

    Yield: 6 servings (serving size: 3/4 cup)

    Hi Gail!
    Your potato salad recipe sounds delicious & pts are nice & low too.
    I really like potato salad...sort of a red-light food 4 me. I haven't indulged since OP (w-a-y back to 7/10! ).

    Gail, Thanks for the recipe, I needed a good Potato Salad. I am making this for our Labor Day cook out!

    This is my real low pt. "tater" salad and we love it....steam 6 small red potatoes, cut in 4ths in micro.and let cool...leave skin on. Add 1/4 c. chopped scallion or red onion,& 1stalk celery diced. Add 1 tbl.ff or low- fat mayo mixed w/3 tbl. ff sour cream. Salt & pepper to taste and split into 2 or 3 servings. Count accordingly.

    You could make this even lighter by using Best Foods/Hellman's Just 2 Good mayo. 1/4 cup is only 2 points. Think I'll do that this weekend.
