    HEARTY RYE BREAD

    4 cups rye flour, dark -- whole rye
    3 cups whole wheat flour
    1 tablespoon yeast -- SAF instant
    2 teaspoons salt
    2 tablespoons caraway seeds -- whole
    2 1/2 cups water -- warm
    1 tablespoon molasses -- unsulphured
    2 tablespoons apple cider vinegar -- organic

    Place dry ingredients in a mixing bowl. (If using regular yeast, do not add yeast to dry ingredients, dissolve yeast in 1/2 cup of the warm water until bubbly. Add the yeast mixture with the water to the dough).

    Mix the dry ingredients well. Mix molasses and vinegar and add to the dry ingredients. Add water slowly, while mixing until the dough comes together in a stiff but pliable mass. Get as much of the 2 1/2 cups of water in the dough as necessary to make the dough soft and workable. Add more if necessary. Knead gently until smooth and springy. Cover and let rise until doubled.

    Punch dough down and let rise until doubled a second time.

    Punch down and divide into 2 portions. Roll each portion into a ball and place on lightly oiled baking sheets.

    Let shaped loaves rise until doubled. Preheat oven to 450. When loaves are doubled, bake at 450 for 10 minutes, then reduce heat and bake at 325 for 25-35 minutes, or until done.

    Momma,
    I hate to ask a dumb question but are the total servings 24 for both loaves or 24 slices per loaf?
