    Bella Braised Chicken

    Serves 6 – 5 Points Each

    1 T unsalted stick margarine (I used butter)
    2 onions, chopped
    2 celery stalks, chopped
    1 large carrot, diced
    2 garlic cloves, minced
    3 T flour
    ¼ tsp freshly ground black pepper
    6 4-oz boneless skinless chicken breasts
    1 T olive oil
    1 14-1/2 oz can diced tomatoes
    1 C chicken broth
    ½ C dry white wine
    2 T minced fresh parsley
    1 tsp dried thyme leaves

    Preheat oven to 325.

    In a large non-stick skillet, melt margarine. Add onions, celery, carrots and garlic – sauté 5 minutes or until softened. Place veggies in a 3 quart covered baking dish.

    Place flour and pepper in a gallon sized Ziploc bag. Add chicken – shake to coat.

    Heat olive oil in the same skillet. Add chicken and brown, 2 minutes per side. Arrange chicken over veggies in dish. Return skillet to heat – add broth, tomatoes, wine and spices – cook and stir til boiling. Pour over chicken, cover and bake for an hour or until chicken is cooked.

    232 Cal, 6 G fat, 2 g fiber

    Note: I served this with a bulgur pilaf and steamed veggies.

    Kimba, Thanks for the recipe. I am adding this to my to try list.

    If I don't have the wine should I use more chicken broth?

    I'd use either more chicken broth or apple juice - those seem to be the most common substitutes for white wine.
