Thread: Crockpot Sour Cream Salsa Chicken 4 Points!

    This was given out at our meeting yesterday and here's a copy of the email that I sent out to one of the other members who didn't have anything to write on (I also sent this to my SIL)

    Crockpot Sour Cream Salsa Chicken
    Serves 4 1 serving=4 Points

    4 skinless boneless chicken breast halves
    1 pkg reduced sodium taco seasoning mix
    1 cup salsa
    2 TBL cornstarch
    1/4 cup light sour cream

    Spray crockpot with cooking spray. Add chicken breasts. Sprinkle with seasoning. Top with salsa. Cook on low for 6-8 hours. When ready remove chicken. Mix cornstarch with a small amount of water. Stir into salsa sauce. Stir in sour cream.

    Note: I made this today and everyone LOVED it. I served it with bulgar wheat instead of rice and everyone liked that too (bulgar wheat has half the points of white rice and a lot more fiber). Also, I didn't have any taco seasoning so I found a recipe on the internet and used that instead. In case you are out of taco seasoning, here's that recipe:

    Taco Bell Taco Seasoning
    2 TBL flour
    2 tsp chili powder
    1 1/2 tsp dried minced onion
    1 1/4 tsp salt (I only used 3/4 tsp as the above recipe calls for 'low sodium')
    1 tsp paprika
    3/4 tsp beef bullion
    1/4 tsp sugar
    1/4 tsp cayenne
    1 dash onion powder

    I've made this several times, in fact there is a Salsa Chicken thread in the Crockpot section that probably has 100 posts by now. I leave out the cornstarch and add a can of Rotel. Serve brown rice as a side dish - everyone loves it.

    This is one of my favorites too. I use the leftover chicken to take to work in a taco salad with WOW Tortilla Chips and FF ranch dressing and salsa. YUM!

    This is great.DH made a chicken dinner in the crockpot yesterday and after dinner was done wanted to know if I had any recipes for the crockpot using chicken and salsa.This will be perfect. [img]smile.gif[/img]

    Kind of a silly question...

    Would this work without a crockpot? I was thinking of cooking on low in a big pot.

    Just had to let you know I had this last night and the family loved it! I served brown rice with it and then put it all up in the frig for lunch today. DH came home for lunch and I heated it up (combined) and put a little fat free cheddar on top and heated him up a 1pt flour tortilla. He was ooohing and aaahhing. Thanks for this great recipe.     I made it this morning and it's YUMMY. A couple of people asked about making it w/o a crockpot. I did that this morning and it worked out just fine for me I also made a couple of other modifications. This is what I did:

    I put the salsa and chicken in a corningware dish with a glass lid. I add a little extra water (maybe 1/2-3/4cup?) to the salsa so that the chicken had something to cook in.

    I cooked the chicken and salsa covered at very low heat-(about 250) until it looked done. I was using extra thin chicken breasts, and they probably cooked for about an hour. Thicker breasts may take longer.

    I took the dish out of the oven and lifted the chicken out into a separate dish. I didn't have any cornstarch so I used a little flour to thicken the sauce....then stirred in the sour cream. I think because I had added some water to the salsa, then thickened with flour I had A LOT of sauce. So much so that I reserved about 1cup on the side, and poured the rest over the cooked chicken.

    I froze the extra sauce, so I will have something quick to use to top some chicken breasts some time in the for 1

    The chicken came out very tender, I couldn't wait to have some for lunch because it smells marvelous.

    I made this in my crockpot and it ROCKS! I loved it, DH loved it, kids loved it. It's super easy and the left overs rock too!

    Ok, so I've had this recipe for over a year now and I'm JUST NOW making it for dinner tonight. instead of chicken breasts, I'm using turkey breasts. I post later and let you know how it turned out.

    This dish turned out won-der-ful! I had to pour the salsa out of the crockpot and put it into a pot on the stove in order for the corn starch to thicken. I made rice to go with it and we loved it. I wonder why it took me sooo long to make it?

    Definitely another keeper!

    I usually make this in a skillet on the stovetop instead of in the crockpot. It only takes 20-30 min, and is ready when the rice is.

    how ironic! I just had this tonight for dinner yuuuuuuuuummmmmyyyy! and nope, there were NO leftovers lolol...I forgot to get the low sodium taco seasoning so it was quite salty...but...I drank water galore! GREAT RECIPE!
