If you haven't tried this recipe yet, please do! This is a keeper. The chicken is moist and tender and the breading crispy. Enjoy! Sue.

Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 cup flour
    1/4 tsp salt
    1/8 tsp cayenne pepper
    3 oz buttermilk
    3/4 cup corn flake crumbs
1 lb boned and skinned chicken breast

Preheat oven to 365F. Lightly coat an 8 X 8 X 2-inch baking dish with nonstick cooking spray; set aside.

Combine flour, salt and cayenne pepper together in a medium-size bowl. Place buttermilk and corn flakes crumbs in 2 separate shallow bowls.

Roll chicken breast halves in flour mixture and evenly coat each side. Next dip chicken into buttermilk and then corn flakes crumbs.

Place coated chicken breasts in prepared baking dish. Bake until chicken is tender and no longer pink, about 20 minutes (there is no need to flip the chicken during baking). Yields 1 breast per serving.

Sounds very good. Thank you. I shall have to get the corn flake crumbs and try it!

Try tossing in a small amount of celery seed into the coating mix. I'm Southern, I USED to fry chicken regularly and the addition of the seeds adds a wonderful layer to the taste without adding any additional points.

I'm Italian and living in the South so I combined the best of both worlds. I added some garlic powder, grated Parmesan cheese, and dry parsley flakes to the corn flake crumbs. Yum!
