    Lemon-Apricot Chicken

    1/4 cup Egg Beaters® 99% egg substitute -- *see Note
    2 tablespoons water
    1 cup reduced fat Bisquick®
    1 tablespoon grated lemon peel
    1/4 teaspoon garlic powder
    6 boned and skinned chicken breast halves -- *see Note
    2/3 cup apricot preserves
    2 tablespoons lemon juice
    1/2 teaspoon soy sauce
    1/4 teaspoon ground ginger

    Heat oven to 425ºF. Spray jelly roll pan, 15 1/2x1 inch, with cooking spray. Beat egg product and water slightly. Mix Biquick, lemon peel and garlic powder. Flatten chicken breast halves between sheets of plastic wrap or waxed paper to 1/2-inch thickness.

    Dip chicken into egg mixture, then coat with Bisquick mixture. Place in pan. Spray chicken with cooking spray.

    Bake uncovered 20 minutes. Turn; bake 10 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. Make Lemon-Apricot Sauce -- by mixing all the ingredients in a saucepan; heating through.
    Cut chicken crosswise into 1/2-inch slices. Pour sauce over chicken. Garnish with lemon slices.

    What is MC formatted? Master Chef? What is Master Chef?

    We could learn a lot from crayons: some are sharp, some are pretty, some are dull, some have weird names, and all are different colors....but they all exist very nicely in the same box.

    Bill . . MC is MasterCook . . it's recipe software that allows you to enter your own recipes or import them from elsewhere . . you can then get re-scale them, adjust them, get nutritional information, print cookbooks, get shopping lists, etc. You can find out more information from www.sierra.com or www.mastercook.com

    I have Master Cook Cooking Light and Graham Kerr. Both by Sierra. I have never messed much with them... Bought about 2 years ago. Will have to revisit them.
