Thread: Chicken Hungarian Goulash (6 Points)

  1. #1

I can't remember the original source of this recipe, but it's been one of our favorites for a while now:

    Chicken Hungarian Goulash

1 lb. Boneless skinless chicken breast halves, cut into 1-inch pieces
    1 (14 oz.) can ready-to-serve chicken broth
1 (5 oz.) pkg. (1 cups) uncooked small spiral pasta or elbow macaroni
1 (14.5 oz.) can stewed tomatoes, undrained, cut up
1 (8 oz.) can tomato sauce
1 cups frozen cut green beans
    1 teaspoon sugar
    3 teaspoons paprika
    teaspoon caraway seed, if desired

    1. Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken; cook 3 minutes, stirring occasionally.

    2. Add broth. Bring to a boil. Reduce heat to medium; add pasta. Cover; cook 10 minutes.

    3. Stir in all remaining ingredients. Cover; cook 5 to 10 minutes or until chicken is no longer pink; pasta is tender and sauce is of desired consistency.

    Makes 4 (2-cup) servings - each serving 6 points

Sounds great. I'm printing it out as we "speak".

    Thanks for the post.
