Thread: Southern Fried "oven" Chicken

    MY DH loves this and did not know it was not fried.

    4 servings
    5 points

    1/2c. fatfree buttermilk
    2-3 drops pepper sauce(I put more)
    1/2c. corn flakes,crushed
    3Tablespoons flour
    1/4teaspoon salt
    1/4teaspoon pepper
    2lbs skinless chicken
    4teaspoon olive oil

    Preheat oven to 400. Spray baking sheet with Pam. In large bowl, combine milk & pepper sauce. On wax paper combine corn flakes, flour,salt & pepper. Dip chicken in milk mixture coating compleatly in corn flake mixture. Place on baking sheer & drizzle with oil bake for 30 min. then turn over and bake for 20 min more.

    This is a hit in my house also.
    I have made it with just low fat milk until I discovered that buttermilk also comes in powder form...not so wasteful and I always have it on hand
    Try other spices and skip the hot sauce...
    pretty flexible recipe.

    Thank you Just 4 Today! I can't believe I didn't know butter milk came in a powdered form. I've been adding vinegar to my milk to make buttermilk for years, and never even thought about powdered stuff! Thank you, thank you, thank you! SB

    I'm printing this out! This sounds like a great summer picnic idea, too. I get so tired of the same old sandwiches, etc..(Can you tell I'm already thinking of summer??) Thanks for the recipe!

    I use real buttermilk because it's thicker and holds the coating on better. And for those who don't know, buttermilk is very LOW IN FAT!!!

    Thanks for the recipie. My husband says it's his new favorite way to do chicken. We grilled some veggies along with it and had a great meal!
