I have not tried this recipe yet. It is from Susan Branch's "Girlfriends Forever" book.

HOLY MOLE~ ("This looks, smells, and tastes exactly like Guacamole!" says the author.)
Serves 8 (3 cups)

1 lb. bag frozen baby peas
1/2 C. red onion, minced
1/4 C. cilantro, finely chopped
2 green onions, minced
2 cloves garlic, pressed
1 jalapeno, minced, or 1/4 tsp. cayenne
1/2 tsp. cumin
1 TBS. red wine vinegar
1 lrg. tomato, diced
zest of 1 lime
Salt and pepper, fresh ground, to taste

Drop frozen peas into boiling water. Cook 1 minute and drain. Rinse with cold water and let dry. Puree peas well in processor. Remove to bowl and stir in remaining ingredients. Chill!

62 cal., less than 1 g. fat, 4 g. protein, 69 mg. sodium, 12 g. carbo., 3 g. fiber

[Just read a post today where Cismee uses *asparagus* instead of avacadoes in her *guacamole* recipe! That would be less points than peas!! )
