Hi Buddies -

I came across a few lentil recipes I am interested in trying but they did not include the nutritional info. Could someone please run them through Mastercook for me?

1 cup red lentils
1 can vegetable stock
1 cup chopped onion
1 can diced tomatoes
1 can diced green chilies
1 tsp. chili powder
1/4 tsp. ground cumin
1/2 cup grated fat-free cheese 2 tbsp.
chopped cilantro
Combine all ingredients except cheese and cilantro in 1-1/2 qt. coverable microwave-safe dish. Microwave, covered, on HIGH 18-20 mins. Carefully remove cover and stir; sprinkle with cheese, cover and let stand 20 mins. Garnish with cilantro.

Sweet and Sour Stuffed Cabbage Rolls
1 large head of cabbage
1 cup cooked bulgar
1 cup cooked lentils
1/2 cup chopped onion
1 clove garlic, minced
1/2 cup mushrooms, chopped fine
2 tablespoons mild vinegar
1/2 cup pineapple juice
1 medium can pureed tomatoes
1 teaspoon basil
1 teaspoon thyme
Peel away largest cabbage leaves, parboil few minutes or until pliable. While parboiling, make sauce with last 3 ingredients and put little in bottom of crockpot. Mix lentils, bulgar, onions, mushrooms and garlic with pineapple juice and vinegar. Roll into cabbage leaves, tucking in ends. Place rolls in crockpot and pour remaining sauce over cabbage rolls. Can cook on low all day. Serve with fresh garden peas, mashed potatos and applesauce. Yum!
