Thread: Two Questions: MasterCook and Gnocchi

    First, I was wondering if someone could help me find out the points value for the following recipe, and also, suggest ideas for making it more "points-friendly?" I know I could probably substitute eggbeaters, but I don't know what else. Here is the recipe:

    Green Gnocchi:
    2 pounds fresh spinach, rinsed and spun dry
    1 pound potatoes, boiled
    3/4 cup flour
    1 egg
    1 pinch salt
    2 tablespoons extra-virgin olive oil

    Set up a small ice bath.
    In a pot with a lid, cook the spinach over medium heat, allowing it to steam from the liquid still present on the leaves, about 1 minute. Meanwhile, take the warm boiled potatoes, peel them and run them through a food mill on smallest setting. Remove the cooked spinach and shock in the ice bath. Drain well and wrap in a clean towel and twist to totally dry leaves. Chop very finely with a knife and add to the potatoes. Add the flour. Make a well in the center, add the egg and salt and knead to form dough.

    Bring 6 quarts water to boil and retain the initial ice bath. Roll the dough into 1-inch thick ropes and cut into 1-inch long pieces. Flick off fork tines to establish the classic shape and drop 10 to 15 at a time into boiling water. When they float, all together, remove to ice bath. Repeat until all are done. Remove from ice bath and drain. Dress with oil and hold covered in bowl in refrigerator until ready to use.

    My second question is regarding MasterCook. I don't know that much about it or what it does. Does it take recipes and make them healthier? Or does it give you the nutritional information of recipes? Any help for either question would be appreciated!

    For the whole recipe it's 1148 calories, 35 grams of fat and 28 grams of fiber. Just divide this by how many servings it makes.

    MasterCook is computer software that will figure out the nutritional value of a recipe. It also has many other functions but I bought it mostly for this feature.
