    Default Tasty oatmeal - comfort food

    Based on a quinoa porridge recipe I either found here or on the WW site, I made myself a tasty bowl of oatmeal today. Usually oatmeal made with milk, sugar, cinnamon, makes me gag - it's just too rich. This was even true when I wasn't watching what went into my mouth... This recipe was just right, for my taste though. Definitely a comfort food.

    Usually I make my oatmeal in a bowl in the microwave with 1/2 C quick oats, 1 C water, and three dashes of salt (approx. 1/8 tsp.).

    But here's how I did it today:

    1/8 (scant) tsp. cinnamon
    3/4 tsp. vanilla
    2 dashes salt
    1 C almond milk (count 1 point)
    1 tsp. brown sugar Splenda (count 1 point)
    1/2 C quick oats

    I mixed it all together and nuked it for 1-1/2 minutes on high, and then 3:30 on 30% power - but other microwaves may vary. I do it this way to avoid boilovers.

    I was delighted that almond milk is so points-friendly. Hope someone else enjoys this as much as I did!

    That does sound yummy!

    Sometimes I use oat groats, sometimes steel cut oats, sometimes rolled oats.

    This morning I used 1/2 cup rolled oats, half bag (about 6 oz) froz raspberries, cinnamon and 1 cup water. I added some almond milk when it was done. I'll try cooking the oats in the almond milk and see how I like that.

    this morning I used 2/3 cup large flake oats cooked in water. I put 1 1/2 cups frozen blueberries in another pan with a bit of water, vanilla and cinnamon and heated until bubbling and added a little cornstarch to thicken. Made two servings.

    Next time I may try it with steel cut oats - I really like their texture. This is a special treat for me, because almond milk is kind of expensive.

    I know you can make your own almond milk.

    I'll have to think about where I saw the recipe.

    Funny how I make oatmeal every single day for my children, but I don't eat it myself lately.

    I'll have to try this recipe. Looks comfy.

    I would love the quinoa porrige recipe if it is handy and easy.

    This morning I used some frozen peaches in my oats. I thawed the peaches in the microwave first, then added the oats and some pumpkin pie spice. I used almond milk. Really quite tasty!

    Quinoa Porridge
    Rated:
    Prep Time: 5 Minutes Ready In: 35 Minutes
    Submitted By: Six Pack To Go Cook Time: 30 Minutes Servings: 3

    "Looking for ideas for the quinoa you picked up at Trader Joe's? Here's a dairy and wheat free breakfast porridge thick, rich and delish for those cold mornings in the Andes. Those with nut allergies may wish to substitute soymilk or regular cow's milk for the almond. Adjust sugar to your taste or substitute with agave syrup or black strap molasses (use half as much). This recipe can easily be doubled."
    Ingredients:
    1/2 cup quinoa
    1/4 teaspoon ground cinnamon
    1 1/2 cups almond milk
    1/2 cup water 2 tablespoons brown sugar
    1 teaspoon vanilla extract (optional)
    1 pinch salt

    Directions:
    1. Heat a saucepan over medium heat and measure in the quinoa. Season with cinnamon and cook until toasted, stirring frequently, about 3 minutes. Pour in the almond milk, water and vanilla and stir in the brown sugar and salt. Bring to a boil, then cook over low heat until the porridge is thick and grains are tender, about 25 minutes. Add more water if needed if the liquid has dried up before it finishes cooking. Stir occasionally, especially at the end, to prevent burning

    today I soaked about 1/3 cup raw large flake oats, and 1/2 cup frozen blueberries together. added 1/2 a sliced banana and a few walnuts and will eat tonight. If I had put this together in the fridge overnight it would have been ready for breakfast

    Soaked with a milk, or just each other?

    I have done the oats with applesauce. We like that here. Very much a comfort food.
    And we've done the oats, yogurt, and frozen fruit.

    I bought some unsweetened almond milk and to be honest I'm not loving it. I tried in a steamed latte. Maybe in oatmeal. I went and bought some old fashioned kind. Will try it tomorrow, thanks for the recipe Donna. I have frozen peaches also and pumpkin spice.

    I have been unable to eat oatmeal for a long time. I used to eat it every day. So I tried (hope this is not TMI) Phillip's Colon Health and lo and behold I can tolerate oatmeal again. So far I stick to the rolled old fashioned oats and do just fine. Any suggestions for sweeteners? I use sweet n low but hate the thought. Like to do it no calorie. Any suggestions?

    tomorrow's version:

    I sliced some fresh strawberries, maybe 1/2 cup, added some ff Greek yogurt and about 3/4 cup already cooked, cold, oatmeal sort of chopped up . Mixed and will take to work tomorrow as on of my Power foods mini meals.

    If I was at goal I would add a few walnuts to this and/or a drizzle of maple syrup.

    I don't usually have sweetener with oatmeal, but in the first recipe posted above, I used brown sugar Splenda (and you do have to count points for it). If I wanted sweetness, I'd probably use Splenda.

    I sweeten my oatmeal with the fruit. Oats, berries or banana, almond milk. Some of the alternative milks are sugar sweetened, so I make sure to buy the unsweetened variety.

    i also use fruit as a sweetener and sometimes add 1/2 tsp of sugar sprinkled on top. When you are not used to using sugar on oats even that little bit makes an impact.
