from Veggie Burgers every which way by Lukas Volger

1/2 cup rinsed quinoa, cooked in 1 cup water
1 small boiled potato, mashed with fork
3 tbsp olive oil
1 bunch scallions including an inch of the green part, thinly sliced
1/2 cup fresh parsley
2 tbsps minced fresh ginger
1 1/2 cups cooked red beans
1/2 cup toasted chopped walnuts
1/2 tsp salt
juice of 1/2 lemon
2 tbsp pomengranate sauce

Heat 1 tbsp oil and cook scallions 1 - 2 minutes, add ginger and parsley and cook another 30 seconds, remove from heat.

In a large bowl combine qooked quinoa, cooked potato, scallion mixture, red beans, and walnuts with a potato masher or with your hands. Add salt and lemon juice. Shape into 6 patties.

In an skillet, heat remaining 2 tbsp oil and add patties, cooking 4 - 5 minutes each side, until browned and crisped. Spoon pomengranate sauce over patties while cooking.
