    Default Post your Thanksgiving menu

    I know it's been a little slow here the past few days, maybe everyone is busy getting ready for turkey day??? Anyway, I though it would be nice to share your menu for the big day...My menu isn't totally planned out yet, but here's what I'm thinking:

    • Roasted fresh turkey
    • (I might make) traditional bread stuffing with whole wheat bread
    • Otherwise I might do something with barley or bulgur
    • Homemade cranberry relish (no recipe, fresh cranberries, splenda, apples, possibly other add ins)
    • Cranberry jell-o salad (made SiFi)
    • Roasted sweet and regular potatoes with carrots/onions/garlic
    • Other veggies
    • COW bread, perhaps COW PUMPKIN bread (this is a yeast bread)
    • Salad?
    • Pumpkin pie (SiFi, crustless and regular)
    • Olives, crudites, perhaps some SiFi dip
    • Perhaps some shrimp as my mom loves it but rarely eats it because my dad doesn't like seafood.
    • Apple pie, or apple/cran oat pudding

    It will be just the 5 of us this year( although we are serving at the homeless shelter too). I am just doing the basics this year.

    Turkey
    stuffing
    mashed pot
    gravy
    corn
    rolls
    asparagus my fav
    candied sweet pots

    crustless pumpkin for me and not sure yet for the rest. Dh is not big into desserts.

    It is just DH and me this Thanksgiving. It will be the basics also.

    turkey
    mash potatoes
    gravy
    a vegetable
    I will buy a pumpkin pie for DH and I will make my egg free pumpkin pie for me.

    corn
    green beans with almonds
    olives
    cranberry sauce
    rolls
    stuffing (my mom makes this)
    sis in law bringing dessert, don't know what

    Lynn...do you have a recipe for your cranberry jello salad? Or is it just cranberries and jello?

    Cranberry Salad: (This is my mom's recipe revised to make it SiFi)

    • 1 small package red jello
    • 1 c hot water
    • 1/2 c celery or apple
    • 1/4 c chopped nuts (optional, count points if using)
    • 2 c of cranberry sauce (*see recipe below for sugar free cranberry sauce. The original recipe calls for a can of cranberry sauce)
    • 1 c ff sour cream OR ff plain yogurt
    Dissolve jello in hot water. Chill til slightly thickened. Mix cranberry sauce into jello. Add nuts, apple or celery. Fold in sour cream (or yogurt) and chill.



    *Sugar Free Cranberry Sauce:
    • 1 bag of fresh cranberries (12 oz)
    • Sugar substitute equal to 1 cup sugar
    • 1 cup water
    • 1/4 teaspoon salt
    1. Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
    2. Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
    3. Stir frequently. The cranberries will pop, and then release their "gel" -- and the sauce will come together like magic. Cook until the sauce is the consistency you want -- 5 to 10 minutes.

    I don't know why we always make so much food, but at least I will not have to cook for a day or two . Plus, I always try to make what everyone asks for.

    Turkey w/gravy
    stuffing
    mashed potatoes
    sweet potatoes
    green beans w/mushrooms, onions, and bacon
    our "holiday" salad
    cranberry relish
    roasted acorn squash w/orange-ginger dressing (found on WW site)
    pumpkin pie
    strawberry rhubarb pie
    Italian cookies (these will be my hard to resist food ).

    Okay, due to DF's having been sick and the slider installation not being complete, we are now having Thanksgiving in NH. We might see if any neighbors are around to join us. Just got up here late last night, so haven't checked on that yet. Our menu at this point is as follows:

    Completely SiFi Foods:
    turkey
    mashed potatoes
    green beans
    pureed sweet potatoes with orange (or lemon, I forget!!)

    Non SiFi Foods:
    de-fatted gravy
    stuffing (no butter in it, just the crumbs need to be counted)
    apple pie
    cranberry chutney
    Lyonnaise carrots (basically carrots and onions with butter and broth, might not be enough butter to count and I'll probably use margarine anyway, I have to check the amounts in the recipe)

    Only three of us -

    Turkey - Core/SiFi
    Mashed potatoes - Core/SiFi
    Green bean casserole - Core/SiFi + less than one point per serving
    Corn casserole - not even close to Core/SiFi but I'll limit myself to just a small taste...
    Wild Mushroom & Barley Dressing - Core/SiFi
    Pie - not even close to Core, although I may relent and make a Core/SiFi friendly pumpkin dessert if I feel like it...there's a good Pumpkin Flan recipe everyone liked...I'm about to hit the supermarket and will decide then...
