    1 lg onion
    1 lg eggplant, sliced cut into 2" pieces
    4 sm zucchini, sliced
    2 garlic cloves, minced
    2 lg green bell peppers, cleaned and cut into thin strips
    2 lg tomatoes, cut into 1/2" wedges (I used what I had in my garden, even cherry toms)
    1 (6 ounce) can tomato paste
    tsp basil, tsp sugar,
    1/2 tsp. black pepper, 1/2 tsp oregano
    2T fresh parsley chopped
    1/4 C evoo
    red pepper flakes

    Put all in crock pot sprinkle with the herbs
    Dot the top with the tomato paste
    drizzle on the oil
    Cover and cook on low 7-9 hours (I stopped at 6)
    Place in serving bowl sprinkle with Parmesan cheese
    May freeze up to 6 weeks

    I got this on recipezaar, had to share, so very very good. I sliced french bread in to dip. You got top pasta with it or pita pizzas.

    This was very good. I only let it go for 6 hours as well on low. I would change one thing next time and that is I am going to peel the eggplant. I think it made it just a touch bitter.
