    Sweet Potatoes Supreme

    3 cups peeled, chopped raw sweet potatoes
    1/2 cup water
    1 Tbs light margarine
    2 Tbs splenda
    1 8 oz. can pineapple tidbits, in juice, drained and reserve 2 Tbs of liquid.
    2 Tbs chopped pecans

    In pressure cooker, combine sweet potatoes and water. Cover and bring cooker to LOW pressure over med heat. stabilize pressure and cook for 8 mins. Release pressure, drain potatoes and return to the cooker. Add margarine, splenda, pineapple, reserved juice. Mix well, stir in pecans and cook over med. heat for 2-3 minutes, stirring often.

    148 cal., 4 gm fat, 3 gm fiber. Makes 4- 3/4 cup servings.
