Whipped Potatoes and Carrots

3 cups raw, peeled, diced potatoes
1 1/2 cups fresh or frozen chopped carrots, thawed
1/3 cup water
1/4 tsp salt
2 Tbs light margarine
1/4 FF half and half

In pressure cooker combine potaoes, carrots, water and salt. Cover and bring up to HIGH pressure over med. heat. Stabilize pressure and cook for 5 mins. Remove from heat and drain potato mixture. Return to cooker (or put in a bowl) and add margarine and half and half. Using a potato masher or electric hand mixer, whip until potatoes are fluffy.

139 cal., 3 gm fat, 3 gm fiber. Makes 4- 1 cup servings.
