    Default Lyonnaise Carrots

    Lyonnaise Carrots

    4 cups fresh or frozen carrots, thawed
    1/2 cup chopped onion
    1/2 cup water
    2 Tbs Light margarine
    2 tsp splenda
    1 Tbs chopped parsley
    1/4 tsp salt
    1/4 tsp pepper

    In a pressure cooker, combine carrots, onion, and water. Cover cooker and bring to LOW pressure over med heat. Stabilize pressure and cook for 6 mins.Release pressure and drain carrot mixture and return to the cooker. Add margarine, splenda, parsley, salt and pepper. Mix well and serve at once.

    87 cal.,3 gm fat, 3 gm fiber. Makes 4 -3/4 cup servings
