    Default Easy Pumpkin cookies

    Has anyone tried these? I am thinking of making them with ff whipped cream in the middle like a cookie sandwich.... making them 2 pts each.... any suggestions?

    Easy Pumpkin Cookies 1 box spice cake mix
    1 can pure pumpkin -- (15 oz.)

    Mix together and drop by spoonfuls onto cookie sheet sprayed with cooking spray. Bake at 350 for around 10 minutes or until firm. Allow to cool. Makes 48 cookies. These are so soft and good. Notes: 1 point each
    *you can use a white cake mix and add 2 teaspoons of pumpkin pie spice*

    I made this cake in a jelly roll pan. Made "filling" of SF/FF vanilla pudding and a tub of FF Cool Whip, and made a lower (much lower) point pumpkin roll.

    i ended up making the cookies and then putting the FF cool whip out and people dipped the cookies in it... they all LOVED them! i didnt tell them they were a healthier cookie than normal but what they don't know will help them!

    This might sound like a wierd ?, but when you guys say spoonful, what do you mean, b/c I can get alot on a spoonful!!!! I'm just tryng to make sure the points value is going to be the same. Should I use a tablespoon measureing spoon or a teaspoon one, and how much of it? Sorry to ask so many ?'s

    You can mix 1 cup of mini chocolate chips with them and they are 1 pt for 36 cookies

    I love these things but now I am confused. I have went back and reread this thread over and over and I am wondering if I am counting the points wrong. I make the 12 muffins like Stephanie posted and I count 2 points for each muffin. I sometimes eat 2 of these muffins for breakfast with a cup of coffe and count 4 points for 2 of them. Am I right or am I wrong?? Someone please help me clarify the points before I gain back my weight!! I am hooked on these things!!

    If the whole batch is 48 points, and you make 12, then each cookie is 4 points. If you make 24, then they're 2 each. If you make one big cookie, it's a 48-point cookie. You might need some WPA bonus for that one.

    Yep, if you make 12 muffins/cupcakes/cookies, they are 4 points each. Yikes!

    Good grief!! I had been making 12 of these and counting 2 points each. I had to go back and refigure my points and it wasn't pretty!! I don't think I will make them for awhile now. I suddenly lost my appetite for them .

    I'm questioning whether the whole thing is really 48 points. Are the cake mix and the pumpkin really the only two ingredients? No eggs/oil/etc? If so then these aren't much better than plain old chocolate cake. A regular old cake mix made according to directions will make 12 servings of 4-5 points.

    BTW, if you want low-point muffins, FiberOne has an apple/cinnamon muffin mix that can be made two ways. With oil & eggs it's 2.5 points a muffin (makes 12). With applesauce and egg beaters it's 2 per muffin. They're pretty tasty!

    Thanks Blackbeard! I have seen the fiber 1 muffin mix in the store but looking at the stats on the pack I thought it looked like it would be fairly high in points. I will definitely check them out. I love muffins for breakfast with coffee but I can't afford to spend 4 points on a single muffin.

    I learned my lesson the hard way on not double checking the points on some of the recipes I fix. I actually gained 2 pounds in 2 weeks and although I am not blaming it all on eating 2 of those yummy pumpkin muffins for breakfast every morning for a week straight and only counting 2 points each, I am guessing it had alot to do with it!!

    Correction - the FiberOne muffins I mentioned are 3 points, not 2.5, as prepared. They may be 2.5 with the applesauce/egg beaters recipe.

    This sounds like a good idea - how long did you bake it for? Was it a good consistency for rolling up?
