    Default QOTD - 7/9 - New-to-you Core foods

    (Sorry I missed yesterday - busy at work!)

    Expanding on the new-to-you veggie question:

    What foods are new-to-you since starting Core?
    What foods can't you believe you lived without for so long?
    What are your favorite ways of fixing them (share recipes if you can!)?

    New to me since starting Core:

    Bulgar and Quinoa - love them both! Add them to soups, salads, casseroles, my breakfast oats - anything!

    Soy cheese - it really helps to have something that at least resembles real cheese, and it will melt! (I like a quick high-protein snack of thin sliced chicken or turkey breast rolled up with a slice of soy cheese.)

    Bulgar would be mine. I put it in just about anything. Just LOVE it.

    Soy cheese is new to me. Is it fat free? What brand would you recommend?

    ff cottage cheese.
    i would never have even thought of eating it, now it's one of my favourite breakfast things.....
    along with oatmeal. i used to HATE oatmeal....now i can eat it every day for breakfast too. fills me up, warm in my belly, just what i need.

    I had never eaten wheat kernels (aka wheat berries). I probably had never eaten ff cheese either...as for wheat kernels, I just cook them plain and use them as a base for other things or in a cold grain salad. I used to make them a lot but I don't anymore, no particular reason. I'm more into bulgur (which was not new to me). Oh I also had never had quinoa before, but I am not that fond of it. Regarding ff cheese, I use it in cooked things as I don't like the taste when it is "cold"...I use it in quiches etc.

    Couscous. I put chicken on it. I will add black beans and salsa (or pico de gillo). I will add cut up red bell peppers and fat free feta cheese. I'll stuff a portabello mushroom with it and broil (adding fat free feta and diced veggies into the couscous). Yum!

    The kind I've been buying is made by Galaxy Nutritional Foods. I have only bought the "Veggie" products - you can see what the package looks like by clicking on the Veggie link here:

    I have not found any that was fat free (but at least it's not saturated fat!), and the slices have 2 gr. fat each. I especially like the pepper jack and the slices with jalapeno.

    Couscous. Never heard of it and would never eat it but once I found Whole wheat I can't live without it. I add a nice vinegarette and some mustard, onions, chicken, parsley, tomatoes, or basil or whatever is fresh in my garden. Yum. I get F&V in plus oils that way,.

    Edamame is a new one for me. I really liked it too! Also I've added Quinoa, Bulgar and pearl barley, and frozen fruit....i had never eaten it frozen...its awesome! Love those Grapes!!

    grits - would never ever try them pre-core

    Mary have you tried the frozen grapes with the ff sf jello? They are really good too. Jut put grapes in a ziplock with any flavor ff sf jello, shake the bag up and freeze. Tastes like candy!

    I don't eat many soy products, so I don't know what to recommend, but soy cheese is core, regardless of fat content. As is plain soymilk. You can seek out the "lite" versions if you like, but as long as it's unflavored, it's core.

    Pre-Core I thought PARSLEY was a garnish... LOL. I never thought to EAT it... But tabbouli is a big favorite of mine now.

    Polenta is new to me, athough I dont eat it much. Also ff refried beans and couscous. I have a hard time finding whole wheat couscous though, so I dont eat that much either. It always seems to be pre-flavored, ie not core.

    I really need to try some new grains. Been on ww core since March and still have not tried bulgar, wheat berries, or quinoa. I usually stick with plain ole brown rice.

    I love polenta chips as well, but I tried to fry up some polenta in olive oil, and just didn't care for it. Any ideas? Do you add spices to it or just fry it plain?

    I felt the same way, it's just too plain. When I served it to my family, they were less than excited . Then I tried the recipe above.............and we had a hit! It's almost like plain pasta, no too great alone but fantastic as a base for a sauce. Think of it as a base. I've also served it under chili (really good), and with stew, cut into bite sized pieces (when I ran out of potatoes). Think "outside the box" and see what you come up with .

    Linda - I tried wheat berries!!! They are great. I just added 1 cup wheat berries, 3 cups water, a pinch of salt to a crock pot set on low overnight. It was the easiest thing ever. This morning was my first time trying it and I ate it like oatmeal, it was awesome!!! Great find!

    Thanks Linda! I will give this a try. It does sound better in a recipe using it as a base. But to eat it alone(unless it's made into chips) I just didn't care for it! Thanks for the tip, I will try it!
