    Default Cheesy Salsa Chicken....with pics :)

    I had no idea what to do with the chicken breast fillets that I had defrosting for dinner tonight.
    So I had a quick look in the fridge and plucked out some tomato salsa and Laughing Cow cheese and *voila* ----> Cheesy Salsa Chicken

    Very tasty and easy to make, so I thought I'd share.....

    Serves : 4
    Points : 6

    Ingredients:
    4 boneless chicken breast fillets - I used 200g (7-8oz) for 5 pts each
    4 wedges Light Laughing Cow cheese - 1 pt each
    Tomato Salsa
    Salt & Pepper to taste


    Prepare chicken fillets, salt and pepper to taste.
    Cut each chicken fillet almost in half, just enough to create a 'pouch'
    Place one cheese wedge inside each pouch (I sliced the wedges in half length-wise) and secure with toothpick if needed.
    Spray baking dish with oil spray and cook for approx 30-35 minutes(depending on your oven) at 175C / 350F
    Add 1-2 full tablespoons Tomato Salsa

    6 points per serve

    Serve with veggies or salad (I served with steamed broccoli tossed in toasted gralic and almond flakes)
