    400g peeled and chopped butternut squash
    0
    200g peeled and chopped sweet potato
    2 ˝
    1 carrot, peeled and chopped
    0
    3 onions, roughly chopped
    0
    ˝ tsp cumin
    0
    2 tsp chilli flakes
    0
    ˝ tsp cinnamon
    0
    ˝ tsp ginger
    0
    200ml light coconut milk
    7
    500ml water
    0



    Soften the onions in a spray of oil until golden.
    Add the spices and stir to coat the onions. Let the spices warm through.
    Add the veg and coat in the onion and spice mix.
    Pour in the water and simmer until the veg is almost cooked.
    Add the coconut milk and cook until the sauce has thickened and the veg is completely cooked.
    Serve!

    This recipe serves 4, I usually let the curry cook for ages before adding the coconut milk as the buternut squash and sweet potato break down alot and u get a reali thick sauce, it tastes like it should be bad but really isn't!! I usually grill some chicken and serve with rice (of course I havn't included those points here!)

    Around 2.5 points for a serving of this alone!

    This recipe looks very interesting and exotic to me. I already have the butternut squash on my shopping list. I will add the sweet potato and carrot (I have the rest in the house) and give it a try this week. That is if this snow ever stops and I can go food shopping!!!

    Glad u like it! It's freezable as well so I keep portions in the freezer and when I don't have the energy to cook it's all there - just microwave and boil some rice to go with! easy!

    Thanks for the tip on freezing...I will do that with the rest so I have some for next week!
