Lentil Barley Soup
8 servings - 1 cup each - 3 pts
(1 1/2 cups also comes out to 3 pts)

1 cup grated onion (yeah, I chop mine)
1 cup finely sliced celery
1 clove garlic, pressed
2 tsp oil
28 oz can diced tomatoes
3/4 cup rinsed lentils
3/4 cup pearl barley
6 cups vegetable broth
1/2 tsp crushed rosemary
1/2 tsp oregano
1/2 tsp pepper
2 cups sliced carrots
salt to taste

Saute onion, celery, and garlic in oil. Add remaining ingredients and simmer for 40 minutes. Better next day.
