    Default Fiber One Muffins (1 Point Each)

    Low Fat Fiber One Muffins
    3 c Fiber One Cereal
    1 c Boiling Water
    1 c Sugar
    3/4 c Unsweetened Applesauce
    1/2 c Egg Substitute
    2 1/2 c Whole wheat flour
    2 1/2 tsp baking soda
    1/2 tsp salt
    2 c skim milk mixed with
    2 Tbsp Lemon Juice
    1. Pour boiling water over cereal and let stand.
    2. Mix together remaining ingredients then add softened cereal.
    3. Bake as many as you'd like in muffin tins sprayed with cooking spray.
    4. Bake for 18-20 minutes at 400 degrees.
    5. This recipe makes 40 large muffins, and the batter will keep in the refrigerator for up to three weeks, so you can have fresh, hot muffins anytime!

    I made a half batch of these and they were delicious and moist. I would also like to try to make them with pumpkin instead of applesauce and some cinnamon or pumpkin pie spice!

    I just got through making these muffins and they were really good. I'd definitely make them again.

    Does it really make 40 muffins? I don't think you're lying, I just think I can't picture those ingredients making 40 muffins!

    I made up the batter this am and baked 12 of them. Mine didn't quite raise to the top of my muffin tin. Maybe I oversprayed it. I will try the rest with paper liners and let them set overnight to soften up a bit so the paper doesn't stick. I went alittle light on the batter in the pan, too, as i was concerned about the recipe making 40 for one point. I love the fact that you can store the batter and bake as needed.

    the flavor is awesome! It's hard to believe they are only one point. I think I found something I can bake and take on my bus trip to disney in a couple of weeks. they will make great portion controlled snacks- well- controlled if I have someone else hold them and dole them out to me!!!

    Because I'm such a goober about such things, when I got the batter made up I measured it out - not being precise or such mind you (lol). To make the 40 muffins you have to use 2 tblsp of batter for each muffin. These didn't make a huge muffin for me using only 2 tblsp of batter, but all in all they were pretty good. To us not quite as good as the whole wheat muffins I came up with a recipe for, but they are a nice change of pace...
    And when I said 2 tblsp, I didn't mean a measuring tablespoon, just a regular one. I stuck it in the batter and just got a decent amount on the spoon. Hope this helps some....
