    Default Rice Casserole

    Servings: 6
    Points: 5.1/serving

    1/4 cup chopped onion
    2 garlic cloves, minced
    1/4 cup Blue Bonnet Light Vegetable Oil Spread
    3 cups cooked long-grain rice
    2 cups shredded fat free Cheddar cheese
    1 cup minced fresh parsley
    1 cup skim milk
    8 egg whites, lightly beaten
    2 teaspoons Worcestershire sauce
    1 teaspoon salt

    1. In a large saucepan, saute onion and garlic in butter until tender. Add remaining ingredients; mix well.
    2. Transfer to a greased shallow 1-qt. baking dish. Bake, uncovered, at 350 F for 40-45 minutes or until a knife inserted near the center comes out clean.

    Let me know what you think. I found that it had a lot of flavor and was easy to make, and the use of fat free over regular cheese kept the cheese from being too overpowering.
