Makes 2

4 sundried tomatoes dry, finely chopped (not in oil)
8 oz lean ground turkey (8)
1 tbsp cumin
1 tsp dried basil
1 tbsp onion powder
1tbsp garlic powder
2 tsp EVOO (2)

1 onion thinly sliced 1
1 tbsp balsamic vinegar
2 wedge laughing cow cheese 2
2 english muffins toasted 2

Mix first set of ingredients in bowl. Halve and flatten into thin patties. (do not omit oil because turkey will really dry out)

Spray pan with Pam or ICBINB. Over medium heat saute onions with salt (salt draws out moisture and helps to caramelize) until translucent (about 5 minutes). Stir and Cover letting caramelize for another 15-20 minutes. Don't worry about burning. Once onions are caramelized add balsamic and reduce another 5 minutes. Onions should be a mahogany color.

While onions are caramelizing, cook burgers either on outside grill or on stove. Should be about 3 min. each side (just make sure the insides are not pink).
Assemble burgers, cheese, english muffin, lettuce tomato and onion on bun. YUM!
