hi there, i was just wondering if someone can help me find a healthier, vegetarian substitute to my recipe.

i love eating vegetables in the morning, and i normally take 1/4 cup of bisquik, mix it with water, and pour it over sauteed vegetables to make a imitation omelet. as i can not eat eggs.

this normally yields 4 pancakes. but unfortunately, it takes 1-2 tea spoons of margarine to prevent it from sticking, we cant use non stick (it has gelatin or lecithin -im not sure which:S)

i used to eat just one of the 4 pancakes, and have 1 point for the whole thing.

i am just wondering if there are any other flour substitues, that might taste the same , but be healthier.
