    Default Points for chicken casserole? Please help.

    I would like to make a chicken casserole but do not know the points and I don't have the tools to figure it on my own.

    I am using a package of skinless, boneless chicken breast and the nutrition info on the package is: Serving size is 4 oz., servings in pack is 7, calories per serving: 110, total fat per serving is 2.5. I am also using 2 cans of ff cream of chicken soup and 1 can of cream of celery soup and 1 box of stove top stuffing.

    My hubby loves this casserole but I have not fixed it in awhile because of not knowing the point value.

    Any help would be greatly appreciated. Thanking you in advance!

    www.sparkpeople.com has a free recipe builder you can put in your ingredients and figure the NI per serving from which you can figure your points.

    Emmabelle, I don't have an exact recipe for this chicken casserole. It is just something I have made for years, is so simple and hubby loves it!

    I just use a pack of skinless, boneless chicken breast

    2 cans 98% FF cream of chicken soup

    1 can of 98% FF cream of celery soup

    1 (6 oz.) box of stove top stuffing

    I boil the chicken breast until they are done and let them cool. Take the soups and put in a pot together and simmer until heated, I add about half a can of water and use a whisk to get the lumps out. I heat the amount of water that it calls for on the stuffing box and when the water is boiling, I add the stuffing. I don't use butter, only the water. I spray a baking dish with cooking spray and when the chicken is cooled, I shred it and place it in the dish then I pour the soups over the chicken and crumble the stuffing on top. I bake it at 350 for about 30 minutes. I don't bake it too long because the stuffing will dry out too much. You want to see the soups bubbling though.

    As for the points, I divided the dish into 6 serving sizes and counted each serving as 5 points. I am guessing at this but it really can't be much more than 5. I don't have the tools to figure the points exactly.

    Here's a variation on your casserole!!

    Chicken Stuffing “Pot Pie”

    16 oz. cooked chicken breast, diced 16 pts.
    2 C frozen corn 4 pts.
    2 cans green beans, drained
    2 C frozen peas 4 pts.
    1 onion, chopped
    2 cans 97% fat free turkey gravy 6 pts.
    Salt & pepper to taste
    Mix all ingredients and put in a sprayed 9 X 13 pan or two 8 X 8 pans.

    1 box chicken stuffing—made with water only 12 pts.
    Make boxed stuffing mix with the amount of water listed on the box.
    Omit butter and do not add more water. I just used hot tap water and let it sit while I mixed up the other ingredients. Using a fork—fluff stuffing to eliminate clumps and distribute over casserole.
    Bake at 350° for 45 min.

    Total pts.=42 8 servings at 5 pts. each
