    Default Needed Bran Muffin Recipe

    I am looking for a Bran Muffin Recipe. I have been in a bran muffin kick lately, but I hate giving up 7 points for one muffin. If anyone has a recipe please let me know. Thanks so much in advance!!!

    Hi There



    Not Sure of the point value at this time but here is a bran muffin receipe:

    2 1/2 cups water
    3 cups bran flakes
    Low Fat Brownie mix
    1 1/2 tsp baking powder

    Combine all and bake 350 degrees 20 - 25 minutes

    I just bumped up a recipe called Pineapple Oatbran Muffins. These were so good and only 2 pts. They make a generous muffin too.

    Blueberry Mufins-Whole Wheat
    1 1/4 cups skim milk
    1 1/2 cups Wheat Bran (I use Bob's Red Mill)
    8 oz unsweetened applesauce
    2 egg whites
    1/4 cup splenda, granular (more if you like sweeter muffins)
    1 tablespoon molasses(optional)
    1 teaspoon cinnamon
    1 teaspoon vanilla
    1 tablespoon non-alluminum baking powder
    1 1/2 cup whole wheat flour
    2 cups fresh or frozen blueberries
    (use other spices if you like! nutmeg, ground ginger, allspice)

    Place skim milk and wheat bran into bowl and let absorb (5 minutes). Add applesauce, egg whites, splenda (if using) cinnamon, vanilla and molasses; stir until well combined. Add: wheat flour and baking powder, stir until moistened, fold in blueberries.

    Divide batter into muffin tins coated with cooking spray. I use the 6 hole jumbo size, or 12 hole regular tins..
    Bake at 350 degrees 45 minutes for Jumbo size muffins
    35-40 minutes for regular size muffins
    Cool in the baking tin for approximately 30 minutes and remove gently..you may have to tug alittle but do it gently. If using paper liners (I spray them too) you should still let them sit awhile to loosen tops from pan more easily.

    baking powder with alluminum leads a bitter taste in these muffins. I spend alittle more $ and get the non-alluminum. The molasses/splenda replaces the 1/2 cup brown sugar in the muffin recipe I altered for this version.

    12 regular muffins- 106 calories ea, 1 g fat, 6g fiber=1 point
    (Please use slider when eating more than 1 muffin per day)
    6 jumbo muffins=211 calories ea, 1 g fat (5.5% calories from fat) 10g protein, 48g carb, 12g dietary fiber, 1mg cholesterol; 295mg sodium. Exchanges; 2 grain (starch) 0 lean meat, 1/2 fruit,0 non fat milk; 0 fat, 0 other carbs

    www.recipezaar.com and look for Healthy Pumpkin Pie Bran Muffins - they are 1 point, and they are really good.

    Sorry, I didn't see your post above the last one you posted. I guess these pumpkin muffins are 1 pt. Doesn't get any better than that. I can hardly wait to try them.
