    Default What do I do with a Pork Tenderloin Roast??

    I've never cooked one of these but it was so low in points I thought I should try it.

    What do I do with it now??

    Probably not going to help you but I just LOVE it cooked in my little rotissary. I put a rub on it (oregano, garlic, pepper and anything else that tickles my fancy). Yum!

    I usually cook mine in my crock pot. Just toss in whatever veggies you have to go along with it and a little chicken or beef broth. I usually try to do carrots, and few potatoes. Another option is to put it in the crock pot with a can of sourkraut. I have also heard of people putting a packet of italian dressing mix in to add to the flavor. Anywho, hope this helps.

    MMM... with such an expensive cut I would rub it with olive oil, then spike it with garlic (really thin slices cut in half the long way, then make little cuts in your meat and shove the garlic in.) Then rub in some salt and pepper, fresh or dried chopped rosemary and sage. For best flavor, toss it back in the fridge for an hour or two or even overnight. Then roast it or grill over indirect heat to internal 170 degrees. Good luck.

    I've made a Pork Chili Verde, by just throwing it in the crockpot with a couple of jars of Herdez Salsa Verde (green salsa) and fresh chopped onion. After it finishes cooking for several hours you can shred the pork. It's good with a low point tortilla or on a bun with some shredded green cabbage. I do boneless skinless chicken breasts this way too.

    I put one in the crock pot overnight and added salt, cracked pepper, garlic, accent(msg), a smidgeon of brown sugar and a cup of water, it was falling off the bone by morning. I then took some juice off of it and added potatoes, carrots, mushrooms, and onions and cooked until tender, my family really enjoyed it.

    You can also bake it until tender, chop and make B-B-Q with it. Good luck~

    Oh wait Im sorry it wasnt a tenderloin it was a pork roast. I have used lemon pepper, cracked pepper and garlic on those and baked them its delicious.

    Flavorful Pork Roast
    1 (8 lb.) pork loin roast
    1 t. dried fennel seeds, rubbed
    2 t. salt
    1/4 t. pepper
    1/2 t. oregano
    1/2 dried bay leaf
    1/8 p. nutmeg
    1/8 t. ground cloves
    2 T. parsley
    1 t. minced dried onion
    1 clove garlic



    Place roast, fat side up, on rack in open pan.
    Mix remaining ingredients with fingers.
    Make flavor pockets in roast with knife.
    Place 1/2 t. mix in each pocket and press deep.
    Rub remaining flavor mixture over roast.
    Roast meat, uncovered at 350 allowing about 20-30 min. per lb. until meat thermometer registers 160.
    Remove roast from oven about 20 min. before serving.
    Make gravy with drippings in pan.

    I put my pork tenderloin roast in the crockpot over a large pile of sliced onion..add some chicken broth and cook for about 5 hours on high..this is fall apart tender and the onion gravy is awesome.. I do slightly thicken it with cornstarch/water slurry..

    Another fav..
    Roasted Italian Pork Tenderloin (I substitute the roast for the tenderloin)
    I make a dry rub of:
    1 tablespoon italian seasoned breadcrumbs
    1 teaspoon dried thyme
    1 teaspoon dried basil
    1 teaspoon onion powder
    3/4 teaspoon salt
    1/2 teaspoon pepper

    I rub roast with 1 teaspoon olive oil, then rub on the above mixture. I coat a nonstick pan with cooking spray and brown the roast on all sides..then place in a 375 degree oven for about 40 minutes (depending on size of roast-may be longer/shorter time)

    This recipe comes from WW annual recipes for success 2005 for pork tenderloin. A 1 pound tenderloin serves 4 and points are listed as a value of 3 in the book. I imagine the roast would be the same points value (but will serve more)
