    Default Crockpot Carrot Cake - Recipe and Review

    I think our Christine P. posted this recipe (thank you for yet another good recipe), but since I couldn't find it, I decided to repost it. It's waaaay to good to get lost.

    The whole family thought it was absolutely delicious! For a topping, I mixed up a bit of cinnamon and Splenda with FF plain yogurt. DOUBLE YUM!

    Crockpot Carrot Cake Serves 12
    2 eggs (4 pts) (I used eggbeaters - 1 pt)
    1/2 cup brown sugar twin (?)
    1/3 cup olive oil (?)
    1 1/2 cups oat meal (6 pts)
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    3/4 cup grated carrots (0)
    1 can (14 ozs) crushed pineapple, drained (5)
    1 teaspoon vanilla
    Beat together eggs, sugar subsitute and oil.
    Combine oats, soda, salt and cinnamon; add to sweetner mixture and beat well.
    Stir in carrots, pineapple and vanilla.
    Place in sprayed Crock-Pot.
    Cover and bake on High for 2 1/2 to 4 hours.

    Oops, I'm sorry - I don't know all the points. I meant to post this on the Core Thread.

    Hopefully someone out there can help us with the points that I don't know. I edited the post to include the points I do know.

    Please correct me if you notice something is not right.

    I ran this through MC. I couldn't find any NI for brown sugar twin other than 1 tsp is 0 calories. I don't know if 1/2 cup would add up but over 12 servings I would say it's negligible..

    That rounds to 3 points per serving.

    You could get it to 2 using just 1/4 cup oil (and it would give you 1 teaspoon of healthy oil per serving too!)
    Per Serving (excluding unknown items): 107 Calories; 5g Fat (42.5% calories from fat); 3g Protein; 13g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 211mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1/2 Fruit; 1 Fat.

    The points are the same using 2 eggs instead of eggbeaters.
    with 2 eggs and 1/3 cup oil:
    Per Serving (excluding unknown items): 129 Calories; 8g Fat (51.4% calories from fat); 3g Protein; 13g Carbohydrate; 2g Dietary Fiber; 35mg Cholesterol; 209mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1/2 Fruit; 1 1/2 Fat.

    with 2 eggs and 1/4 cup oil:
    Per Serving (excluding unknown items): 116 Calories; 6g Fat (45.9% calories from fat); 3g Protein; 13g Carbohydrate; 2g Dietary Fiber; 35mg Cholesterol; 209mg Sodium. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1/2 Fruit; 1 Fat.
